Basil
This spicy member of the mint family is native to India, Africa and Asia. It has a special affinity for tomatoes and it is crucial to a good ratatouille or chicken cacciatore. Warm, sweet, almost clove-like in aroma, basil has been a culinary constant for centuries.

Bay Leaf
Bay leaves are the aromatic leaves of the evergreen, laurel nobilis. This Mediterranean native is regularly employed in stews and along with thyme, leeks, wine and cream, is essential to French cuisine. The bay leaf symbolizes glory. Caesar often wore its wreath in triumph.

Chervil
A symbol of sincerity, chervil’s delicate aroma is sweeter than parsley and faintly reminiscent of anise. It brings out the flavor of other herbs and is a hero in French herb mixes. To defeat the flavor loss that occurs during cooking, add just before serving.
