Welcome to the Occasional Gourmet Recipe Archive.
The recipes contained in this archive have been gathered from any number of sources including the gracious input of friends, family, mad wonderings through cookbooks new and old and a lifetime of enthusiastic yet oddly vegetative viewing of PBS food shows.
Cooking for me has always been about creating flavor. I just love to play in the kitchen. It has so much going for it: color, texture, aroma and an endless array of gadgets, like a porcelain ginger grater—now that’s cool.
However, the best part is the wonderful sense of satisfaction, a kind of
heart felt joy that is present at a good meal shared with friends. As my friend Danielle used to say, “that’s what it’s all about”.

How to Use our Blends
Let creativity be your guide. Our blends are extremely versatile.
They can be used as called for in traditional recipes or you try
adding them to familiar dishes for an added lift. Here are some
ideas.

Berber Blend Use as a rub for pork
loin- rub into meat and marinate in the fridge for 2-3 hrs, grill
basting with oil. Or try it as sprinkle on soups, stews or smoked
fish, or grilled red or Yukon potatoes. |

Cool Vindaloo Hearty and full of
flavor this curry is wonderful in meat dishes or use it to flavor
squash. |
 |
Curry This the classic Indian
curry blend. It's the one you'll want to jazz up left over chicken,
turkey or veggies. To make an easy white sauce simply add to your
favorite cream of chicken soup. To add a sophisticated air, lightly
stream carrots, mushroom, and water chestnuts and combine with
the "sauce", then add cut-up chicken or turkey. Simmer
for 10-12 minutes. Yum! |

Dukkah Crunchy and full of flavor,
you'll want some nearby at all times to.. finish pan fried fish,
sprinkle on top of salads, use as a topping for lightly oiled baguette
or munch as a healthy snack while your penning the great American
novel. |

Garam Masala Aromatic, with a touch
of mace, this blend adds a wonderful deft touch to cinnamon rolls.
It is equally at home on streamed veggies, brown rice, even chicken.
Just add to 1 cup of yogurt for a wonderful chicken marinade. Served
cold the next day, it makes an excellent picnic treat. |

Mild Curry Delicate and sweet,
this curry is perfect for egg or crab dishes. Owing to its coriander
notes, this curry works well in coconut sauces and adds a lovely
touch to egg salad. |

Moroccan Tajine Blend Open a pack
and you are whisked away to the souks of Morocco. It's that good!
Use it to make a classic Chicken stew or try this soup: start with
a tomato puree, add 1 cup each of chicken stock and cream, add
the blend. Let it cook down, Add onion, a clove of garlic, potato
and carrot and continue to cook over low heat 1 hr. Heaven! |

Panch Phora It means five spice
in Punjabi, Roast lightly in a cast iron skillet, let cool, then
grind and add to your favorite carbohydrate. |

Raz el Hanout Surprisingly versatile,
Raz el Hanout makes a nice rub for chicken as well as a wonderfully
complex seasoning for rice or sprinkle for tabbouleh. |

Sambar Powder Designed to season
lentils, this masala is HOT! It is perfect for pumpkin soups, squash
or to brighten-up any bean dish. It also makes an nice accent for
mayonnaise. |

Taco Seasoning We use a number
of New Mexican chiles to get this blend just right. It has a great
flavor that adds to stews, chiles, bean dishes and of course tacos.
For a simple marinade just rub onto meat or chicken, baste with
olive oil and grill- fabbu! |

Tandoori This is the go-to classic,
we all love. When you want something sophisticated without a lot
of fuss, Tandoori is it. Just add the pack to one cup of plain
yogurt, add skinless chicken. marinade for 2-4 hours and grill.
Combine with rice and a salad for a fast, tasty meal. |

Tunisian Five Spice Sophisticated
and aromatic. This spice is incredible a top roasted chicken. Or
you can add about 1.5 teaspoons to 1lb of ground lamb for a wonderful
grilled treat. This blend also adds a fine touch to stir-fry meat
dishes. |

Zatar Versatile and delicious-
Zatar adds a nice lift to grilled cheese or pizza. It is also wonderful
lightly sprinkled on humus. For a nice Sunday morning treat surprise
your family by baking it into a Pillsbury breakfast croissant-
savory and so good. |
