Adobo Rub
Last summer, I got this idea for a spice rub. I wanted it to be tangy, a touch smoky, not too hot and versatile
enough that it could be used as a rub or marinade with olive oil...the result, our Adobo Rub. It is superb on a
thick steak, ribs or pork chops. You mix it with about an equal amount of olive oil and paint it over the meat.
Or add kosher salt ( to taste) and use it as a rub. Let it set-up for about 15 minutes. Then, grill or roast in a
hot oven. After I made the first batch, we had a cook-out and it was a big hit. How cool is that!
I used to think advertising was fun. HA!

Berber BBQ Blend
If you like spicy food, you will adore this blend. It has hints of garlic with a warming touch of ginger, in a background of pungent, sweet notes of allspice and cinnamon. It finishes with flashes of zing from our Southwestern chili flake. This blend is based on an old North African Berber recipe that was used for open pot cooking. The blend has a lot of deep flavor and is terrific with lamb. It also works well with hamburger and just a light sprinkling adds an unexpected nuance to smoked salmon. Try it as a dip with humus. ( Mix in a teaspoon. Refrigerate, letting it "bloom" for about an hour or so) This blend is interesting in that it includes, fenugreek. One of the oldest cultivated plants. It is naturally dense in minerals and vitamins; is thought to improve the appetite. It is reported that the Berbers liked their women to be shapely and therefore encouraged the liberal use of the plant. HMMMMM

Chinese Five Spice
This blend owes its rich flavor to the unctuous licorice-like notes of anise and star anise. Our classic formulation combines the sweetness of cinnamon, with deep pungent notes of clove set against a zesty black pepper element. This blend works well with pork or oily meats like duck. It also teams well with orange/citrus notes. Add 1/2 a teaspoon to flavor 1/2 cup of sugar or try a tiny pinch in tomato soup. WOW! Have fun with this one.

Classic Curry
This blend is based on a old Anglo– Indian recipe. I created the blend with the idea, that was to be used as an accent flavor. One that would do well with cream sauces, mayonnaise, or to use as a flavoring for dips or leftovers. I wanted a blend that would be the Swiss Army Knife of Indian blends.
It turned out to be a little more complicated than I had anticipated. But I stuck with it. (Sometimes being a tad determined is a good thing.) By repeatedly making this blend, I really learned how to work with spices.
The result… a well balanced, full flavored blend. It is mild with a subtle accent of coriander. This blend is one of the most complicated ones we make, as some elements are heated, or tempered and then combined in a very specific order of addition. It’s about as close as I could come to being your Indian Auntee for a day.
This is a wonderful present for someone who does a lot of entertaining.

Dry Harissa
Every Sunday, we do a Farmers Market at the Marin Civic Center. One day a women came by and we started to chat. She asked me if I carried Harissa and I told her that we only did dry spices. Then she replied, “ Well I don’t want the oil... too many calories” ZAP! What a great idea. I couldn't wait to get into the kitchen on Monday.
Our Harissa is truly a thing of beauty. Because you can mix it with the oil of your choice, you can easily modify its use: mix with olive oil or flavored oil to saute’ or mix it with grape seed oil for higher temperature dishes. Or you can always use just a pinch in veggie dishes. It’s amazingly pliable. And the caraway accent works nicely in breads as well! Try it. It’s a favorite of our local San Francisco Chefs!

Dukkah
Munch, munch, crunch. Whatever this blend may lack in photogenic qualities, it compensates for its rich flavor. It is a wonderful topping for salads. For fancy dinner parties, we will take a baguette split it in half, sprinkle on some fruity olive oil, garlic and Dukkah and then heat it up in the oven. Tasty. Perfect with a first course and a nice Pinot Gris, Sancere or a soft Pinot Noir. Heather our good friend and sometimes editor likes to use it in pie crusts. How will you use it?

Garam Masala
The heart of this blend is the black peppercorn. The balance of the spice elements are there to provide a distribution of its flavor. When finished, this blend comes together in a
brilliant mélange that will transport your taste buds to a heavenly, far away place. A
favorite of my vegetarian customers, it is a terrific seasoning for steamed vegetables.
Combine it with yogurt to make a lovely aromatic marinade for chicken or lively dip for

Herbes de Provence This blend is the one every pantry should have. I doubt I can do justice to its versatility. I love it in ratatouille or to season poached salmon or sprinkle it inside a chicken cavity
with some lemon and roast. Well, I’ll stop there. This blend is special for me, as it is
based on an old recipe, that was a favorite of my dear friend, Danielle. One you try it,
you notice that it is perfectly balanced with a finish of super blue French Lavender.
It’s a great gift for people who like flavor but do not care for spicy accents.

Italian Blend
This is a great basic blend. It is just the right flavoring for tomato sauce. It will add flare to a home made pizza. Or, try it in eggs or quiche. Moroccan Tajine Blend
The best way to describe this blend is YUM. It has just the right mix of chili, sweet cinnamon and tangy warming ginger with a touch of turmeric. It makes a delicious chicken stew, it is great with root vegetable and it the key flavor of our Moroccan soup recipe. So, it’s not too surprising that this blend is one of our very best sellers. Mulling Spice
Here is it, the classic we all love. When the weather turns chilly, you want something that will take the frost off your hands and face. Mulled apple juice or cider is the best. Our blend uses whole spices. We do not grind them. By keeping the spices whole, the flavors can be extracted by the heat in the simmering apple juice or cider, producing a fresher deeper taste without a bitter finish. One pack makes about a gallon. Just about the perfect size for a small get together.

Poultry Seasoning Mix
This is a great item to have on hand for the holidays. It makes a nice seasoning for poultry (chicken or turkey) and it is great as a flavoring for stock you can make from the bones.
As you can see from the following recipe, this blend makes a nice home cooked meal, well special!
Use this classic blend to add a savory touch to roasted chicken. Rinse chicken and remove any parts from the inner cavity. Quarter a lemon and insert into the cavity along with a teaspoon or so of the blend. Rub the outer skin liberally with a olive oil/butter mixture. Roast at 400 degrees until the juices run clear ( about 20 minutes a pound). Remove from the oven. Let the meat rest for 15 minutes. Add a teaspoon of the blend to the pan juices and deglaze with wine or stock. Serve over the meat.

Seriously Great Taco Blend
Thinking that the world really didn't really need another Taco Blend, I didn't sell this blend for years. Then, my friend Paul casually mentioned that he really liked the tacos he had at our house and could I send over some of the blend. Ok, I can take a hint. The rest as they say is history.
Ironically, of all the cool blends we make, this one is our very best seller. Everyone loves it. No secret really, we use three kinds of chilies, organic garlic and onion for a clear fresh taste and a brawny oregano for a rich flavor. The result...well you be the judge. Za'atar
This Middle Eastern classic is a big seller at our local San Francisco Co-op,
Rainbow Grocery. We use organic ingredients with natural Lebanese sumac to create a blend that is fresh, zingy and tangy/sour from the sumac. It's just full of flavor. Of course, we realize that good Za'atar is a delicate/relative thing, depending on where you are from and "what Mom used to make". While we do not pretend to have grown up on our version, it is mighty tasty. It is a great seasoning to have on hand for jazzing up chicken, fish or to make small appetizer dishes, like pizza. To make this pizza you just slice fresh baguette into ovals, drizzle a little olive oil over it, add a little piece of tomato and feta cheese a small touch of Za'atar and grill lightly. Or use it to flavor lamb chops-

Zydeco Blend
